Ingredients:
- 4-6 pieces of chicken (legs, thighs, or breasts)
- 2 cups buttermilk
- 2 cups all-purpose flour
- 1 tbsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp cayenne pepper (optional)
- Vegetable oil (for frying)
Preparation:
- Soak the chicken pieces in buttermilk for at least 1 hour (preferably overnight).
- In a shallow bowl, combine flour, paprika, garlic powder, onion powder, salt, pepper, and cayenne.
- Heat oil in a deep fryer or large pot to 350°F.
- Dredge the soaked chicken pieces in the flour mixture, pressing down to coat thoroughly.
- Fry the chicken in batches for 12-15 minutes until golden brown and cooked through (internal temperature should reach 165°F).
- Drain on paper towels and serve hot.
